UMAMI Crave the Fifth Brussels Sprout Salad
The lowly brussels sprout is an often under appreciated vegetable, but when they are roasted, they are the superstars of the meal. This dish can be served cold or heated, with bacon or without. Finish it with your favorite UMAMI Crave the Fifth sauce and discover a dish that shouldn’t be saved for special occasions!
Brussels sprout salad with feta, dried cranberries and toasted pumpkin seeds, finished with an UMAMI Crave the Fifth drizzle.
~ 1 lb brussel sprouts
~ 1/4 small white onion, small diced
~ 1 C dried cranberries, chopped
~ 1 C pumpkin seeds, toasted & chopped
~ 1/4 C crumbled feta cheese
Shred 3/4 of the brussel sprouts with a mandolin or in a food processor
quarter the remaining brussel sprouts, toss in extra virgin olive oil, salt, pepper and roast on a sheet pan at 450° for 7 to 10 minutes to caramelize.
In large bowl, mix shredded brussel sprouts, sauteed onion, cranberries, toasted pumpkin seeds and the roasted brussel sprouts.
toss mixture with a little extra virgin olive oil, season with salt, pepper. Top with crumbled feta.
drizzle with your favorite UMAMI sauce and enjoy!
