UMAMI Curried Maple Pizza with Grilled Corn and Peaches

A masterpiece of local goodness…and it pairs perfectly with your favorite Okanagan white!

quick pickled radish:
4 radish, quartered
1/2 cup each apple cider vinegar & hot water
1 tbsp maple syrup
1/2 tsp salt

-wash and quarter 4 radish and place in a container with a cover
-combine vinegar, water, maple syrup and salt; pour over radish and cover
-let stand while preparing other elements of pizza.

Ingredients:
1 - 12” pre-cooked pizza crust
1 firm peach, quartered
1 ear of corn, kernels removed
1/4 cup white onion, julienned
vegetable oil
pickled radish (recipe below)
grated parmesan or romano cheese
chopped cilantro, for garnish

Directions:

  • Heat oven to 400

  • Add a splash of oil to a frying pan and heat on high.

  • When oil is hot, place quartered peaches in pan. Leave just long enough to toast/char one side, then flip to the other side. Set aside.

  • In the same pan, saute the corn kernels until charred. Remove pan from heat.

  • Remove radish from brine and slice.

  • Spread UMAMI Curried Maple on the pizza crust.

  • Slice peaches and toss onto pizza, along with corn kernels, white onion and sliced radish.

  • Place in oven and cook for 8 minutes.

  • Finish pizza with grated pecorino romano or parmesan cheese and cilantro.
